THIS MONTH’S FEATURED STEAK - BRITISH BLUE
Fri 4th Jun 10 - 12:01

This month's featured steak hails from Higher Foxley Farm near Knutsford in leafy Cheshire. We are proud to feature John Holcroft's famous British Blue not just because we have one eye on our carbon footprint but also because John's 30 years of experience in breeding cattle have come up trumps and have produced what we think are some of the finest eating steaks available.

Even the most sceptical of Euro sceptics will have to admit that this collaboration worked. In the 1850's some visionary Geordies exported the Durham Shorthorn to the lush fields of the Ardennes in Belgium to well...
beef up the stock really!! Creating the Belgian Blue.

After many years of selective breeding by British breeders the result is a stunning sculpted animal. A veritable Jean Claude Van Damme of a beast renamed The British Blue in recognition of its original provenance.
The British Blue has short muscle fibre which gives characteristic tenderness along with a lower fat content than most others and the flavour is right up there with Angus and Hereford breeds.
