Aberdeen Angus...
Our guest steaks this month are from Peter Blaylock's Mill Farm herd in Northumberland typical of the best black polled (hornless) cattle originally from Aberdeenshire and Angus in Scotland. (Hence their moniker!) The lush green grazing in these northerly climes help to produce the heavily marbled meat characteristic of this uniquely flavoured and famous breed.
Old Jock was born in 1842 and his favourite squeeze Old Granny in 1824 (clearly Old Jock was a bit of a toy boy). Between them these two, the first of the Angus doddies and hummies, were responsible for the vast majority of Angus cattle alive today. Indeed Old Jock is listed as No 1 in the definitive Scottish Herd book. Now that's what I call provenance!
The American fast food industry as recently as 2003 adopted Angus cattle as its quality standard bearer. They were quite right to do so and their highly developed Black Angus herds descended from just 4 cattle arriving in Kansas in 1873.
Your steak tonight though is more directly descended from Old Jock or Old Granny. No air miles! just a short trip down the M1.
